Brokkoliropogós pikáns lila hagymával

A meghámozott burgonyát törjük össze, adjuk hozzá az apróra vágott brokkolit, a tojásokat, a zsemlemorzsát, és fûszerezzük sóval, borssal, szerecsendióval. Gyúrjunk belõle egynemû masszát, és lisztezett deszkán formázzuk vastagabb hengerekké. Bundázzuk lisztbe, felvert tojásba, zsemlemorzsába, bõ, forró olajban süssük pirosra, majd papírtörlõre téve csepegtessük le. A pikáns lila hagymához a mézet karamellizáljuk világosbarnára, majd tegyük rá, a vékonyra szeletelt lila hagymát. Forgassuk át, öntsük rá a bort, sózzuk, borsozzuk meg, és 10 percig fõzzük lassú tûzön. Ízesítsük balzsamecettel, és fõzzük még 2-3 percig. Tálaláskor halmozzuk tányérra, és külön edényben kínáljuk hozzá a pikáns hagymát.


Hozzávalók:


- 50 dkg héjában fõtt burgonya
- 50 dkg roppanósra fõzött brokkoli
- 2 tojás
- 2 evõkanál zsemlemorzsa
a bundázáshoz: liszt, tojás, zsemlemorzsa
a sütéshez: 3 dl olaj
- 4 evõkanál méz
- 3 nagy fej lilhagyma
- fél dl száraz vörösbor
- 2 evõkanál balzsamecet
- õrölt szerecsendió
- bors
- só
