Elkészítés:


A forró olajban futtassuk meg a hagymát, szórjuk bele a kockákra vágott bélszínt, és magas tûzön pirítsuk tovább. Sózzuk, borsozzuk meg, majd amikor félig megpirult, adjuk hozzá az áfonyát, locsoljuk meg a borral, és pároljuk össze. Mielõtt levesszük a tûzrõl, szórjuk meg petrezselyemmel, keverjük össze, locsoljuk meg a brandyvel, és gyújtsuk meg (flambírozzuk). A körethez a megtisztított burgonyákat faragjuk hordó formájúra, majd sós vízben fõzzük meg, szûrjük le, és forgassuk össze a vajban megfuttatott petrezselyemmel. Tálaláskor a hordóburgonyát rendezzük tányérra, és halmozzuk mellé, a bélszínragut.


Hozzávalók:


- 70 dkg bélszín
- 25 dkg kék vagy vörös áfonya
- fél dl olívaolaj
- 1 fej vöröshagyma
- 1 dl száraz vörösbor
- 5 cl brandy
- 1 csokor petrezselyem
- só, õrölt bors
